Thermapen Supper Club with Billy & Jack
Last Thursday we celebrated the launch of #JuicyBird – the campaign against dry turkey – by hosting a supper club in collaboration with 2016 MasterChef finalists Billy & Jack. The evening saw the pair cook a seasonal-inspired menu with a twist, seeing the perfect #JuicyBird meet bubble and squeak in a fun and creative start to the turkey season.
Passionate about sharing great food in a relaxed and social environment, the event in Shoreditch enabled Billy & Jack to engage with guests about how the Thermapen was fundamental to cooking varying elements of the supper to perfection. Everyone was able to enjoy a refined menu whilst appreciating that having temperature at the heart of your cooking is essential, whether making a turkey ballotine or roast chicken sandwich. And with Christmas around the corner, it’s also a kitchen staple for festive breads, cakes and puddings.
The evening began by sharing flamed oysters with Billy & Jack in the open kitchen, before settling at our tables with bread and thick servings of marmite butter. To start we were served a smooth butternut velouté, punctuated by the crunch of spiced seeds and pared with a piquant toastie packed with stilton and nduja sausage. Next we had soft, delicately spiced monkfish and a fennel and lemon bhaji, followed by a perfectly succulent roast turkey, sausage and cranberry ballotine with a crisp bubble and squeak fritter and brussels sprouts. To finish we were presented with a comforting apple terrine, sweetened with salted rosemary caramel, shortbread and delightful brown butter celeriac ice cream, before being joined by Billy & Jack once more for a dark chocolate mint marshmallow.
It was a wonderful evening where we enjoyed the company of some very talented food writers, bloggers and recipe developers, whilst being inspired by the exciting culinary season ahead of us. #JuicyBird is a campaign that aims to put an end to the biggest festive faux pas you can make – the overbaked bird. We believe that by cooking your roast by temperature, not time, you can be confident that the results are both safe and succulent.
